I love baked potatoes (or fried, I don't discriminate) but other than potassium, they're just bundles of carbs.

 

The potato (Solanum tuberosum) belongs to the solanaceae family of flowering plants. It originated and was first domesticated in the Andesmountains of South America.

The potato is the third most important food crop in the world after rice and wheat in terms of human consumption. More than a billion people worldwide eat potato, and global total crop production exceeds 300 million metric tons.

There are more than 4,000 varieties of native potatoes, mostly found in the Andes. They come in many sizes and shapes. There are also over 180 wild potato species. Though they are too bitter to eat, their important biodiversity includes natural resistances to pests, diseases, and climatic conditions.

Potato is vegetatively propagated, meaning that a new plant can be grown from a potato or piece of potato, called a “seed”. The new plant can produce 5-20 new tubers, which will be genetic clones of the mother seed plant. Potato plants also produce flowers and berries that contain 100-400 botanical seeds. These can be planted to produce new tubers, which will be genetically different from the mother plant.

 

I love potatoes - really good French Fries (McDonalds or Wendy's), mashed potatoes with butter, those little boiled potatoes people put around things like a roasted chicken (mushed up with plenty of butter), baked potatoes (with butter!), potato salad (a favorite), potato pancakes with sour cream, and even 'twice baked' potatoes.

I'm not sure if I left any of the major potato staples out. Just don't 'foo-foo' my potatoes too much.

 

My grand-dad grew potato's and sold them to the local market, as kids back in the day we all had our own hoe and spent weekends in the potato field hoeing weeds, on harvest we followed the pototato digger with gunny sacks picking up the potato s as they were dug up, then hauling them my trailer to the root cellar and separating them for market and home use and seed for next next season. Looking back those were great days,

 

Oh, damn. Potatoes are the bomb. I love them, but my expanding belly reminds me not to eat them as much. Yukon good or russet, baked to perfection, then slathered with butter. Nothing else, just butter. Same goes for sweet potatoes. In my opinion, there’s nothing better.

Having said that, I do love mashed potatoes with sauerkraut. Don’t knock ‘em until you try ‘em. Big dollop of potatoes, some butter melted in the middle, covered with a scoop of sauerkraut. Yum.
